These are going to be some of the best refried beans from scratch you will ever eat! Follow along and you will learn my tips and tricks on how to do it. This recipe is gluten free.
Refried Beans With Onion
Ingredients:
1 to 1 ½ yellow onion, chopped
3 cups pinto beans, cleaned and rinsed
1 + tsp. Salt
16 oz. extra light olive oil or avocado oil, made for sauteing, frying, baking
2 tsp. Granulated garlic
Directions:
Place your cleaned beans into a stockpot and add cold water to cover the beans by 3 inches. Bring these to a boil (place a lid on the pot). Once the beans begin to boil, remove the lid and stir. Let them cook for 2 hours simmering without the lid. Stir occasionally and add more water if the level drops below 1 inch above the beans.
While the beans are simmering, take a 10 inch frying pan over medium heat and add the olive oil to it.
Once it is hot add the onion carefully to the pan. Make sure to submerge the onion in the oil. There are two ways to determine if the oil is hot enough. 1. Use a thermometer to determine the correct temperature - 350 degrees F. 2. Place a piece of onion in the oil. If it boils up right away, it’s hot enough.
Let the onion cook in the oil for 20 minutes or until it becomes a golden brown. Once done, drain the oil from the onion and let it cool 5 minutes before placing it in a blender. Add ½ cup or more of water so that you can puree the onion. Set aside.
After 2 hours and the beans are soft and have turned brown along with the water, add about ¾ cup of the olive oi (that was used to cook the onion), the onion puree, garlic powder, and the salt to the beans. Stir to combine and increase the heat to high. Taste the beans for salt. They will probably need more than 1 tsp., more like 2 or even 2 ½ tsp. You be the judge.
Bring the beans to a full boil and then lower the heat to medium low to simmer them for at least ½ hour but 1 hour would be better. Remember, the longer they simmer, the better the flavor.
Eventually the beans will start to stick to the bottom of the pan. That’s your cue that they are done. Turn off the heat and mash them.
