As my daughter Sarthika also doesn’t like palak…but when I prepare this , she told Mumma make palak this way…I like it. So lets get started… Preparation Time 10 min Cooking Time 30 seconds per each puri Serving Persons 4 to 6 Ingredients Required 2 n ½ cups Aata or Wheat Flour 1 cup Palak Paste(added ginger,garlic,green chili) 2 tbsp rava 3 tbsp oil 1 tsp carom seeds Salt to taste OIL to deep fry #palakpoori #palangapuri #roshniscuisine Procedure I blanch the palak or spinach leaves and grind with ginger, garlic n green chili and make a fine paste. Add salt , rava to aata. Rub the carom seeds and add this to aata mixture to enhance its flavour. Next add oil and rub this properly so that oil is well incorporated with the aata mixture. When you take some aata and bind it ,it will forms a dumpling shape. Now add the palak paste(I add chutney paste too) to the aata mixture and knead it for some time. After 5 min kneading, rest the dough for 10 min. Then agaian knead it for better result and apply some oil,cover it. Make small lemon size dumpling , dip in oil … Roll it like small puri…roll from all the sides so that it get even thickness. Make it little thick so that puri is well puffed. Roll some puris like this, meanwhile heat oil for deep frying. Notes I add little dhania (coriander chutney paste) also. don’t add water, knead with the green paste only. Knead the aata to a tight dough, after osme time it is little soft due to palak water. Always knead the aata half and rest the dough for 10 min, again knead it so that it is properly kneaded. Apply little oil after kneading, so that the dough will not turn to dry. By adding little rava, the puri will remain crisp for more time.
