PUMPKIN PANCAKE PROTEIN MUFFINS | & don't forget the chocolate chips

Hey, hi, hello everyone and welcome back to Morgs' Menu! Today's video I show you how I make one of my favorite fall recipes: chocolate chip pumpkin protein pancake muffins. These are delicious and a great recipe to meal prep for breakfasts or snacks for the fall. Full ingredient list and steps down below! Follow my Morgs' Menu Instagram here: https://instagram.com/morgs_menu?igshid=w9qqmde4cxve __________________________________________________________ Pumpkin Muffins (12 muffins) Ingredients- 2 cups kodiak cake chocolate chip pancake mix 4 scoops vital protein collagen powder 1 can pure pumpkin 2 eggs 1/4 cup pure maple syrup 1 tsp vanilla extract 1 tsp cinnamon 3 tsp pumpkin pie spice 1/2 tsp salt 3 tbsp chocolate chips Steps- 1. Preheat oven to 350 F 2. Add all ingredients except chocolate chips to large bowl 3. Mix to combine with spoon or hand mixer 4. Fold in chocolate chips with spoon 5. Distribute ~1/4 cup of mix evenly in a greased muffin tin 6. Bake for 25 - 30 minutes 7.
