French Canadian Potage

My friend Benoit Violette, who hails from New Brunswick and taught me so much about cooking, shared his recipe and technique for Potage with me when I lived in Ottawa. It is so delicious and satisfying! It freezes very well, and I even use it as the base for sauces now. Ben would insist the main seasoning is Thyme, which is very important. I also like to add fresh ginger which gives it a nice bite, but which is not traditional. A mild version of Potage can be enjoyed by everyone from little babies to senior citizens and is full of vitamins, minerals and fiber.
